A few weeks ago I bought some cheap apples. They looked lovely – massive and red, but they taste pretty average and were a bit floury. So I did what every sensible person would do and made a spiced apple cake! You can make this either gluten free or not. Oats do not in themselves contain gluten, some people with gluten issues also can’t eat oats, but many can.
I baked this in our wood fired stove, it worked a treat!

Dana’s Gluten Free Spiced Apple Cake
100g Soft Butter
3/4C Brown Sugar
1C Fine Rolled Oats – or do as I did and blitz them in the food processor
1C Flour OR Gluten Free Baking Mix – See below for my recipe or use a bought mix
1C Grated Apple
2t Ground Ginger
2t Baking Powder
Cream together butter and sugar. Add eggs and beat until combined. Add the rest of the ingredients all at once and mix to combine. Bake in a 25cm lined tin at 180 degrees for 40-45 minutes or until a skewer stuck in the middle comes out clean.
Notes: For 1 cup of baking mix you can use – 1/3C Rice flour, 1/3C Maize Cornflour, 1/3C Tapioca or Arrowroot, 1/4t Xanthan gum. Or you can make it non-gluten free and use normal flour. If you can’t use oats you can use coconut instead.
