So it turns out sourdough muffins are a thing. Who knew? I was hoping there was more to sourdough than just bread, but sourdough muffins? Awesome.

Except when they’re not. My first batch was, quite frankly, gross. Rubbery and doughy.
So taking what I learned the first time around I made a recipe that actually works. They are also refined sugar-free too – which is not the same as actually sugar-free but honey is bound to be better for us than refined white sugar!
How to make Sourdough Muffins
Mix and leave overnight
1/2C active starter
1C white flour
1C wholemeal flour
1C water
The next day
Preheat the oven to 200C and well grease 12 muffin pans with butter.
To the dough from the night before add:
75g melted butter
1/2-3/4C melted honey
2 eggs
1/4t salt
2t mixed spice
1 1/2t baking soda
Mix very well with a wooden spoon until nicely combined. Divide into 12 muffin pans. Bake for 20 minutes.
